Tomato Strawerry salad

SALAD
- 2 cups #Green_Mast Blended Flavors™ Tomatoes, halved
- 1 cup Strawberries, halved
- 3 Green Mast Cucumbers, quartered and diced
- ¼ cup fresh Naked Leaf Living Basil leaves, roughly chopped
- ¼ cup thinly sliced red onion
- ¼ cup whole fresh mint leaves
- ½ cup crumbled goat cheese
- ¼ cup toasted pine nuts
DRESSING
- 1 clove garlic, finely grated or chopped
- 2 tsp. Dijon mustard
- ½ tsp. coarsely ground black pepper
- ¼ tsp. salt
- 1 tsp. liquid honey
- ¾ cup extra virgin olive oil
Combine tomatoes, strawberries, cucumbers, red onion, basil, and mint leaves in a medium-sized bowl. Toss with dressing to taste. Sprinkle with goat cheese and toss gently. Finish with toasted pine nuts, sprinkled over top and serve.
