Tomato Strawerry salad
SERVINGS:4 - 6

SALAD

  • 2 cups #Green_Mast Blended Flavors™ Tomatoes, halved
  • 1 cup Strawberries, halved
  • 3 Green Mast Cucumbers, quartered and diced
  • ¼ cup fresh Naked Leaf Living Basil leaves, roughly chopped
  • ¼ cup thinly sliced red onion
  • ¼ cup whole fresh mint leaves
  • ½ cup crumbled goat cheese
  • ¼ cup toasted pine nuts

DRESSING

  • 1 clove garlic, finely grated or chopped
  • 2 tsp. Dijon mustard
  • ½ tsp. coarsely ground black pepper
  • ¼ tsp. salt
  • 1 tsp. liquid honey
  • ¾ cup extra virgin olive oil
Combine tomatoes, strawberries, cucumbers, red onion, basil, and mint leaves in a medium-sized bowl. Toss with dressing to taste. Sprinkle with goat cheese and toss gently. Finish with toasted pine nuts, sprinkled over top and serve.
